Gameday Goodies

Happy Game Day everyone! I can't say how happy I am that college football and cool weather are here! We woke up this morning actually cold! It was about 60 degrees around 10am. Praise Jesus. I knew we moved to Colorado for a reason ;)

In honor of the most wonderful time of the year, I made a few gameday goodies yesterday.

First up is my mom's 7 layer dip. I'm sure y'all all have versions of this dip as well, but this is what we use in my family.




Our ingredients
 

















First layer, Frito Bean Dip



Then a layer of sour cream mixed with taco seasoning


Guacamole



Then a mix of cheese, green onions and tomatoes


Next up I made some chocolate covered pretzels with orange, purple and red sprinkles.



I melted white chocolate chips over a "double boiler"
btw - you have to do this on low or else you burn your chocolate, good thing I bought 2 bags!

Finally, add my colored sprinkles! 
 Go Big Red! (for Aaron)

I hope you enjoy your Gameday! We've got Clemson going on ESPN 3, a few others on the TV and the Nebraska game on gamecast. It really is the most wonderful time of the year!

Aaron has officially started his second year of seminary! To commemorate, I thought I'd paste the answers to some questions we were both recently asked. A way to get an idea of both sides of our life right now. My answers: How did you spend your summer?  We had the best summer! Aaron took Hebrew in June and July, and I had my first summer as a stay at home mom. We went to the beach, pool, the library, visited Chicago and came to Alexandria twice!!  What are you most looking forward to (in your 2nd year at Seminary)?  The “cloud” over the 2nd year is getting ready for our vicarage. an exciting list

Now that we've had some time to settle in, we've begun to discover some of our favorite spots as well as get excited for new ones. Here is a list of things we're really excited about for our new life in Denver. First of all, sports. One of the big draws to Denver for Aaron was the professional and college sports that are in abudance here. We're especially looking forward to the Rockies vs. Giants games in September, heading up to Boulder for some CU Football and walking over to DU for their lacrosse and ice hockey games. We're also pretty pumped about going out to the new Lutheran High School on Friday nights to watch their football games! I'm trying to convince Aaron to start coaching so we can live out Friday Night Lights .   We've also been introduced to a few great areas thanks to some friends we've made so far! 22 weeks (5 months)

this kid cracks me up Just like every mom, I say this every month, but I can't believe he is already 5 months! I'm not going to lie, this event has really caused me to kick my mommy-ness into gear. It is time to get this kid together, ha! So this week I have been really intentional about making sure we get lots of tummy time in, practicing rolling over, lots of time in the bumbo chair and on the couch sitting up and being super silly to pull out those giggles! And honestly, we're having the best time! Not that I wasn't doing these things before, but I had a bit more laid back approach assuming that he'll just learn things on his own. And he will, but now I'm just more up in his face pushing him along! We got over being sick, for the most part, at the end of last week.
