challenge update and a surprise!

  30-Day Challenge to Eat at HOME! Today marks 10 days of the "Eat at Home Challenge". I am glad to announce that so far, we've made it! I will admit, this weekend was challenging and we were definitely missing our Saturday Chick-fil-a! Aaron did want to take a walk to 7-eleven on Saturday afternoon, but restricted himself to just a Rolling Stone magazine.  I'm proud of us and hope that we can build on this success for the next 20 days! I've been collecting recipes that are quick and easy and I must say that I think the realization that making dinner doesn't have to be a huge ordeal has certainly helped in this challenge. For the first few months of our marriage, I placed and unnecessary expectation on myself to make these amazing, from scratch, big meals for us. Clemson WINS!

Wishing I had been here this weekend. It was a great game by the Clemson Tigers and I could not have been more excited to see us upset Auburn's winning streak. After our loss at Auburn last year, which was Aaron's first Clemson game, it was sweet to see us play well and WIN! As ESPN reported "...it was Clemson that proved to be the better team" C-L-E-M-S-O-N!!!

through the eyes of a 4 year old

A few weeks ago we got the chance to go to our first Rockies game! We were SO excited. They played the Marlins and won in the 9th inning! It was a surprising ending, that is for sure. We also had the pleasure of meeting some great kids who attend our church. Of course I was hanging out and talking with them and when I pulled out my camera to take some pictures, well, you know what happened next. So, yes, I spent a good portion of that game letting children under 5 use my camera. I was sure to keep them near me and tried to keep my hand under the camera at all times! One special girl we met was Alexandra Jonte. She is 4 years old and has leukemia. She has been battling it for about 2 1/2 years now and is back in the hospital with a bone marrow transplant scheduled in a few weeks. She is amazing and took some amazing pictures! She was super friendly, outgoing and loved having the camera around her neck. Here are the pics from the evening. Some are mine, but most are hers. Enjoy!

Gameday Goodies

Happy Game Day everyone! I can't say how happy I am that college football and cool weather are here! We woke up this morning actually cold! It was about 60 degrees around 10am. Praise Jesus. I knew we moved to Colorado for a reason ;) In honor of the most wonderful time of the year, I made a few gameday goodies yesterday. First up is my mom's 7 layer dip. I'm sure y'all all have versions of this dip as well, but this is what we use in my family. Our ingredients   First layer, Frito Bean Dip Then a layer of sour cream mixed with taco seasoning Guacamole Then a mix of cheese, green onions and tomatoes Next up I made some chocolate covered pretzels with orange, purple and red sprinkles. I melted white chocolate chips over a "double boiler" btw - you have to do this on low or else you burn your chocolate, good thing I bought 2 bags!  Dipped my pretzels in Finally,
