What I've Been Cooking

When it comes to cooking, I'm either on a roll or lost. Since we're not eating out every night, I'm obviously cooking something, but when trying to come up with meals for the week, I often find myself thinking "well what did I make when we lived in Denver? In New Orleans?" Answer - I have NO idea. I seriously can't remember meals from one week to the next, let alone years!

About a year ago I decided to make a new Pinterest board labeled "weekly menu" that helped me separate recipes that looked awesome (that I would never make) and recipes that would actually work for a random Tuesday night. That has helped some, but its not quite as extensive or reflective of what I'm actually cooking.

So I was thinking it would helpful for my sanity to document semi-regularly meals that our family is enjoying. This is what we've been up to this summer:

1.) Ribs - Aaron got a crock-pot "recipe" from my mom and we've been loving it! This how she'd described it - broil a half rack of ribs about 10 minutes on either side to brown them, transfer to a crockpot, pour a ton of bbq sauce on them and set to high for 5-6 hours. You can also had 1/2 a cup of beer, coke, orange juice, ginger ale, etc if you desire.
2.) BLTs
3.) Red Beans & Rice and Jambalaya - both recipes come from a Cooking Light book that was published early 2000s.
4.) One-Pot Caprese Pasta - I loved this meal!
5.) Grilled Quesadillas - also have realized buying the cooked rotisserie chicken from the grocery store is such a time saver!
6.) Ranch Cheddar Chicken - made this tonight and it was worth making again

Honestly, that is all I can even think of right now, even with going through my Pinterest page.

What are your favorite go-to meals? New recipes that are worth sharing? I'd love all the help I can get!

  1. You are such a good writer. Your opening line cracked me up! You gotta try the Vidalia onion chicken recipe on our blog. It's one if our go-to meals and takes no time at all!

Well...there is not really any other way to say this but... Aaron and I are having a BABY! Yep, Baby Schultz should be arriving this Labor Day. We could not be more thrilled about the news! Once we got through the 12-week ultrasound, which is what this picture is from, we were ready to spread the news! Baby Boy #3!

We are expecting baby boy #3 and since I documented a good amount of my pregnancies with the older two, I want to at least start off giving this one the same treatment! I am due May 25th, though he'll probably come around the 18th by c-section. We found out in my 18 week appointment that we were having a boy and I can honestly say I've been super excited since. With two older brothers already ruining, I mean running, the house, I'm happy to bring another boy into our crazy. This pregnancy will always be remembered by having to have my gall bladder removed at week 11. As soon as I hit 6 weeks I started having intense gall bladder pain. I've dealt with gall stones since Canon was born, but they were always singular events that would pass in about 4 hours, and this pain was consistent and all day/night long. The doctors I saw encouraged me to manage it with diet and hope to get to 16 weeks before discussing surgery. I tried everything, which pretty much meant eating noth...

what's going on

We're starting to try some rice cereal. I've been pretty sporadic about it, but after his 6 month appointment (which is NEXT WEEK!) I'll start putting "solids" into our every day routine.      Canon has found his feet! Now every diaper change is just the most fun, trying to get those toes into his mouth!   Canon is officially rolling over, both sides! This particular picture happened when I had gone into my bedroom for a hot second and came out to find him on his tummy! He can do it regularly now, though he doesn't love being on his tummy and rolls back over quickly.  Other things going on: Canon is officially sleeping unswaddled!! I guess around 2 weeks ago, we started again with the one arm out and went from there. He now sleeps in a fleece sleep sack with arms. I'm not going to lie, the process wasn't quite as daunting as I had originally thought, but I think that is because we waited until he was really ready.  ...
